How to Keep Lean Proteins Juicy

Lean protein contains less internal fat to buffer cooking errors. The solution is not to drown it in sauce after it dries out; it is to control thickness, surface browning and final doneness from the start.
Make thickness predictable
A chicken breast that is thin at one end and thick at the other cannot cook evenly. Pound it gently, butterfly it or cut it into consistent pieces. Similar sizing also makes written cooking times more useful.
Season early when the recipe allows
Salt can season beyond the surface when given time. Brines and marinades may improve flavor and, depending on composition, tenderness or moisture perception. Yogurt marinades work well for many chicken preparations because they cling and bring gentle acidity. Strong acid for too long can make the exterior mushy, so follow a tested time.
Brown without overcooking
Dry the surface and preheat the pan. Sear in batches so the pan stays hot. If a thick piece needs more time, finish it over gentler heat rather than burning the outside. Use a food thermometer and follow the applicable food-safety guidance for the protein and country in which you cook.
Rest and slice correctly
Resting allows temperature to equalize and reduces immediate juice loss. Slice beef against the grain to shorten the muscle fibers. With chicken or turkey, use a sharp knife and avoid sawing thin slices long before service.
