How to Freeze Meals and Desserts Well

Freezing pauses microbial growth but does not improve a dish that was already overcooked, watery or stale. Freeze food while its quality is still good, package it against air and choose recipes whose structure can survive ice crystals.

Foods that usually freeze well

Soups, stews, cooked beans, many tomato sauces, meatballs, unglazed cakes, cookie dough and portioned casseroles are often reliable. Foods with a crisp raw vegetable texture, delicate emulsions or high-water fresh garnishes may be less successful.

Cool and portion first

Follow safe cooling guidance, then divide food into portions that will thaw evenly. Use shallow, freezer-safe containers or bags, remove excess air and leave suitable expansion space for liquids. Label the name and freeze date.

Protect texture

Undercook pasta slightly if it will finish cooking during reheating. Freeze sauces separately from crisp coatings. Add fresh herbs, yogurt toppings, fruit garnish or crunchy crumbs after reheating. Cheesecake and other dairy desserts often freeze better when cooled and set completely before wrapping.
